  • GRAPES: Maresco, Marchione, Falanghina, Bombino Bianco
  • PRODUCTION AREA: “Macchia di Gatto"
  • TYPE OF SOIL: Red ferrous soil, with underlying limestone layer
  • TRAINING SYSTEM: Spurred cordon
  • HARVEST METHOD: Handy harvest in boxes, during the last week of August / first week of September
  • VINIFICATION: Soft pressing and brief maceration in the press. Second fermentation in bottles. Each bottle rests minimum 36 months sheltered from light, drafts and knocks, at controlled temperature, in our cellar, in deep contact with yeasts. The degorgement is made by hand at cold.
  • ALCOHOL DEGREES: 12% vol.
TASTING NOTES
  • SIGHT: Brilliant straw in color and fine perlage.
  • NOSE: Delicate nose rich in nuances, with flavours of pastry, cedar, bergamot, and hints of apple, anise, fern and white flowers.
  • PALATE: Delicate and harmonious, with a great body and a pleasant freshness.
  • FOOD PAIRING: Perfect with seafood, crustaceous, sushi, risotto, rice&mussels local deli, fresh and semi fresh cheeses.
