CHARMAT METHOD


  • GRAPES: 100% Maresco
  • PRODUCTION AREA: Crispiano, Masseria Scorace
  • SOIL: Sandy loam
  • VINE-TRAINING SYSTEM:Guyot
  • PLANTS PER HECTARE: 4300
  • PRODUCTION PER HECTARE: 8 tonnes
  • HARVEST:Mechanical harvest during the last week of August
  • VINIFICATION: Soft pressing of the grapes. Alcoholic fermentation in stainless steel tanks at a controlled temperature
  • SECOND FERMENTATION: In sealed tanks at a low temperature. Left in contact with the yeast for three months in the tank. Refinement in the bottle for at least one month
  • ALCOHOL CONTENT: 11% vol.
TASTING NOTES
  • SIGHT: Light yellow-green color with a rich perlage
  • NOSE: Delicate scent of green apple, lime, lemongrass, wisteria and musk
  • PALATE: Agile and dynamic sip with a refreshing citrine vein and a nice effervescence. On the palate a pleasant fruity note
  • FOOD PAIRING: Starters, bruschetta, tarts, raw and cooked seafood, sushi, shellfish and crustaceans, pasta dishes with vegetables and seafood
